Cisternino is indeed one of the most charming villages in the area, with a somewhat oriental charm due to the popular and “instinctive,” or unplanned, architecture that distinguishes the historic center. A succession of houses leaning against each other, joined by arches, interspersed with external stairs and ladders, adorned with small stone balconies adorned with geraniums. It is useless to indicate a precise itinerary of things to see: the beauty of this village lies in wandering through the countless narrow streets, getting lost and then finding oneself again. Cisternino is best known for the butcher shops in the historic center, connected with taverns. Outdoors, on wooden tables and in front of a bottle of good wine, people eat meat bought at the counter and cooked at the moment. The stoves are almost always on view: you follow all stages of cooking and, in the meantime, have a word with the locals. Among the many specialties, be sure to try the characteristic bombette (pork roulades usually stuffed with cheese) or gnummareddi (skewers of sheep entrails).
